PREPARE:
Pick a ripe pineapple. It should be yellow in color and smell sweet! Slice off both ends. Turn on one end and cut in half. Cut each half in half. Turn each 1/4 wedge on its end. Slice off the tip of the wedge, which is the core. Cut each 1/4 wedge in 1/2 again. Place each wedge on its end and cut off skin side. You should have 8 spears in all. Cut each spear into 1/2 inch chunks.
WAYS TO EAT:
- Eat as a snack or sweet summer dessert after dinner.
- Put pineapple in sparkling water with ice for a refreshing summer drink.
- Top with yogurt or coconut cream, and fresh mint.

Make a salsa or a salad:
- For salsa, mix diced pineapple, red onion, lime juice, and red onion.
- For a salad mix with mango and avocado for a delicious summer salad.
- Add pineapple to pizza, fruit kabobs, and veggie kabobs.
ADD SOME FUN!
Make pineapple ice cubes by placing chunks in the freezer. Add to water or seltzer and serve with a drink umbrella!
