PREPARE:
Wash well under cool water. Cut the pumpkin in half and remove the seeds (keep for roasting). Cut into wedges along the groove lines, then peel the skin off with a vegetable peeler. Cut into chunks.
WAYS TO EAT:
- Add pumpkin cubes to soup, stir fry, casseroles, and stews.

- Drizzle cubes with olive oil and sea salt.
- Roast in the oven at 350 for 30 minutes.
- Add roasted cubes to salad, pasta, and grain bowls.
- Roast pumpkin seeds in oven for 20 minutes at 250.

- Eat as a side, drizzled with olive oil and sea salt.
- Make creamy pumpkin soup with steamed pumpkin puree, nutmeg and vegetable broth.
