PREPARE:
Wash well then cut off both ends. Never eat the rhubarb leaves, they contain oxalic acid which is a poison. Cut rhubarb into chunks.
WAYS TO EAT:
- Add rhubarb to a strawberry crisp.
- Sprinkle raw diced rhubarb into oatmeal or yogurt.

Roast rhubarb:
- Toss with maple syrup.
- Place on baking sheet and bake at 375 for 20-25 mins.
- Add to salads, grain bowls, pancakes, and muffins.
